CAMPING RECIPES
Breakfast
(serves 4)
Ingredients:
Assorted fruit
4 waffle cones
2 cups yogurt
2 cups granola
Directions:
Prep at home:
Wash and cut the fruit and store in containers for travel to your campsite (if using bananas, slice just before assembling the parfaits)
At the campsite:
Carefully take a cone and add a spoonful of yogurt to the bottom. Then layer a spoonful of fruit and a spoonful of granola.
Continue layering the cones with yogurt, fruit, and granola until the cones are full, finishing with granola on top.
Lunch and Dinner
(serves 6)
Ingredients:
2 teaspoons olive oil
1/2 medium red onion, thinly sliced
12 button mushrooms, thinly sliced
1/2 cup frozen corn
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese
6 large burrito-size flour tortillas
Guacamole (optional)
Salsa (optional)
Sour cream (optional)
Directions:
Prep at home:
Heat the olive oil in a medium skillet over medium-high heat and saute the onion and mushrooms until tender. Add the corn and cook for 4 more minutes.
Let cool, then add to a resealable plastic bag.
combine the cheddar and mozzarella cheeses in a large resealable plastic bag
Store both bags in the refrigerator until ready to use, the transfer to a cooler when you're traveling to your campsite
At the campsite:
Lay out six pieces of foil and place a tortilla on each piece. Divide half the cheese among the six tortillas.Â
Divide the veggie mixture among the tortillas and top with the remaining half of cheese.
Fold tortillas in half along with the tinfoil. Roll up the sides of the foil to seal.
Place the packets on the grate and cook for 2 to 3 minutes per side, until the cheese is melted and the tortilla is crisp.
Top with guacamole, salsa, and sour cream (if using).

Ingredients:
1 (6-count) package english muffins
1 (15 oz) can pizza sauce
2 cups shredded mozzarella cheese
1 (6-oz) package sliced pepperoni (optional)
Mixed chopped vegetables, for topping (optional)
Directions:
Open up the English muffins. Cover each side (12 total) with pizza sauce
Sprinkle cheese on top of the pizza sauce on 6 of the sides.
add the sliced pepperoni (if using), and any desired veggies on top of the cheese.
add another layer of cheese on each side.
Top each sandwich with one of the sauce-covered muffin slices.
Wrap the sandwich in foil
Place the sandwiches on a grate and grill them over the fire for about 5 minutes per side.
Let cool slightly before unwrapping.
